Denver Omelet Bake

Hello everyone and welcome to another segment of...

Breakfast is always a fun and unique meal.  Lunch and Dinner can so very often be the same types of meals with little or no change between them; if you take any dinner or lunch and ask what meal they are for most people won't be able to tell.  Breakfast is not the same.  For some reason we have designated certain foods to be for early in the morning only unless you decide to have "breakfast for dinner" as eating those foods at that time isn't ever just called "dinner."

Breakfast foods are generally delicious and because of the unique nature of breakfast, I am always intrigued when I come across a new way to make a breakfast food.  I found a version of this recipe online and almost immediately made it twice in the same week because we enjoyed it so much.  If you like fairly simple egg dishes then this might just be the thing for you!

Gather Your Ingredients
  • 8 Eggs
  • 1/2 Cup Half and Half Cream
  • 1 1/2 Cup (6 oz) Shredded Cheddar Cheese
  • 1 Cup Finely Chopped Cooked Ham
    • This is most easily found by buying cubed ham and cutting it into smaller pieces
  • 1/4th Cup Finely Chopped Green Pepper
  • 1/4th Cup Finely Chopped Onion
  • 9x9 Glass Pan
  • Cooking Spray
  • Large Knife for Chopping
  • Chopping Block
  • Measuring Cups
  • Mixing Bowl
  • Wooden spoon
  • Whisk

1. Preheat Oven to 400°F

2. Finely Chop Green Pepper and Onion
It will take around half of a green pepper and 1/4th of an onion in order to make 1/4th of a cup of each.  Chop them, measure out 1/4th cup of each and place them into a bowl or measuring cup to the side.

3. Finely Chop Cooked Ham
Measure out 1 Cup of Ham and chop into small pieces.  Place in same container as the chopped onion and green pepper once finished.

4. Crack Eggs and Add Half and Half
Crack all 8 eggs into a mixing bowl and add the 1/2 cup of Half and Half Cream

5. Whisk Eggs
Whisk the eggs vigorously until the solution is a uniform consistency

6. Measure Cheese
Measure out around a cup and a half of shredded cheddar cheese

7. Mix Onion, Green Pepper, Ham, and Cheese into Mixing Bowl
Make sure the ingredients are thoroughly mixed together

8. Grease Pan

9. Pour Egg Mixture into Pan
Make sure that the mixture remains even and smooth



10. Bake for 30-40 Minutes
This will all depend on your oven.   Mine tends to waver closer to the 40 minute mark.  You will know that it is fully cooked when the top has become golden brown, the whole mixture has risen slightly, and the top layer doesn't easily shake when moved.

11. Cut and Serve

This dish is extremely easy to make.  Yes chopping the ham, onion, and green pepper can be time consuming and slightly irritating but that can probably be quickened by purchasing already diced products if you can find such.  This is perfect to have when guests come over for breakfast or if you plan to have a breakfast meal for dinner.  I hope you enjoy it!
